Molasses Cookies (D, TNT)

Yield: 45 very large, flat cookies

1-1/2 sticks butter
1 cup granulated sugar
1/4 cup molasses
1 egg
1-3/4 cup all purpose flour
1/2 tsp. ground cloves
1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking soda

Preheat oven to 350°F.

Melt butter in a medium saucepan, add sugar and molasses. Mix thoroughly. Lightly beat egg and add to butter mixture; blend well.

Sift flour with spices, salt and baking soda, and add to mixture in saucepan. Blend well. Batter will be wet.

Lay a sheet of aluminum foil on a cookie sheet. Drop tablespoons of batter on foil, leaving 3" between cookies. They spread during baking.

Bake until cookies begin to darken, 8 to 10 minutes. Remove from oven while still soft and let them cool on foil. When cooled they peel off easily.

Poster's Notes:
I just made a double batch to send off to my kids and remembered why I made them so often when they were little. First of all, they're scrumptious, and secondly, there's almost no clean-up. I mix these cookies right in the saucepan and you do it by hand, no mixer. These are soft, chewy cookies.

I made the cookies using honey instead of molasses. I increased each of the spices by 50% and stirred in 1/2 cup chopped crystallized ginger at the end. After I made the first batch I realized they tasted like hermit cookies, so I added 1/3 cup raisins to the second batch, and 1/3 cup chopped pecans to the third batch. They're all delicious!
