Mandelbread, Sugar-Free (P, TNT)

Yield: 3 to 4 dozen

3/4 cup margarine
2-1/2 cups all-purpose flour
3 eggs
1 tablespoon baking powder
15 packets of sugar substitute
1 cup chopped walnuts or almonds or pecans
1/4 cup orange juice
1 teaspoon vanilla
Ground cinnamon
1 teaspoon lemon extract

Preheat oven to 350°F.

In a large mixing bowl cream margarine, eggs, and sugar substitute until smooth. Add orange juice and flavoring; beat until thoroughly mixed.

Add flour and baking powder to creamed mixture and blend well. Stir in nuts.

Form dough into 4 rolls and place on a baking sheet. At this point I wet my hand with water to shape the balls. Flatten the balls into loaves.

Bake for 25 minutes. Remove from oven and let cool 5 minutes. Cut into slices 1-1/2" thick, arrange on baking sheet, sprinkle with cinnamon and sugar substitute. Bake additional 19 minutes to toast.

I also add some raisins and if you can find sugar-free chocolate morsels add to the batter mix well before shaping the rolls or logs.

Really does tastes great and you really can't tell that is sugar-free.
