Mandelbread, Cherry-Chocolate (P, TNT)

2 large eggs
1/2 cup sugar
1/2 cup canola oil or corn oil or vegetable oil
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
Dash of baking soda
Dash of salt
1/2 cup nuts, chopped
15 maraschino cherries, chopped
3/4 cup semisweet chocolate chips
Cinnamon and sugar, mixed

Preheat oven to 350°. Grease a baking pan with sides.

Beat the two eggs until blended. Add the sugar and mix until combined. Add oil and mix well, add the vanilla.

Combine flour, baking soda, baking powder, and salt and then add to the egg mixture and mix until all the ingredients are incorporated.

Add cherries, nuts, and chocolate chips. Mixing well after each addition.

Take the batter and place it on the greased baking sheet and with damp hands shape into a loaf. Sprinkle with cinnamon and sugar and bake for 30 minutes.

Remove from oven. SLICE WHILE WARM.

Poster's Notes:
I use walnuts but mandelbread is traditionally made with almonds.

I usually spray the pan with non stick spray.

When I add the cherries, nuts and chocolate chips I combine them and mix by hand.

This cake comes out better if made by hand and not any type of mixer.

You can add or delete any of the chips and cherries and add anything that you like. You can add any nut that you like. If you use almonds, I would lightly toast them first and I would use almond extract instead of the vanilla. Although you can use the vanilla extract.

This is a very easy cake to make and I always have the ingredients in the house.

You must slice this while still warm. About 3 to 5 minutes after it is removed from the oven or you will not be able to slice it.
