Mandelbread, Australian (P, TNT)

Yield: 42 to 44 slices

1-1/2 cups egg whites
1-1/2 cups sugar
1/2 tsp. cream of tartar
3 cups flour
375g (14 ounces) roasted almonds, skin on

You need 3 pans 10"x3"x1-3/4". If you don't have them find something close to it. Spray with cooking spray.

Pre-heat oven to 350°F.

Beat egg whites gradually. Add sugar and cream of tartar and beat until stiff.

Fold in almonds. Fold in flour. Don't over mix.

Fill the sprayed pans; smooth tops, bang twice on counter.

Bake for 30 to 40 minutes or until light golden brown. Cool 15 minutes and take out from pans and cool on rack completely.

Wrap with plastic wrap and refrigerate overnight. In the morning, unwrap and slice each log with a large sharp knife in 1/4" slices and you will get 42 to 44 slices. Spread them on cookie sheets and dry them in 200°F oven. Don't burn them!

Keep in closed container not for too long as you will finish them in no time.

Lately, we replace some of the almonds with pistachios and add some chocolate chips.
