Hamantaschen, Mix by Hand (P, TNT)
Source: Spice and Spirit Cookbook (Yellow edition)
Yield: 4 dozen

4 cups flour
4 eggs
3/4 cup sugar
2 sticks margarine, softened (8 ounces)
1 tablespoon orange juice
4 teaspoons baking powder
1 teaspoon vanilla
pinch of salt
orange rind to taste

Preheat oven to 350°F.

Mix all ingredients by hand. You may add a drop more juice or flour depending on consistency of dough.

Roll out dough very thin (about 1/8 inch) on floured board. Flour the rim of a glass and cut out circles.

Spread about a tablespoon of filling in the center of each circle. To shape triangular hamantaschen, pinch sides toward center.

Bake on well-greased cookie sheet at 350°F for about 20 minutes until slightly browned. When rolling out dough, divide into several sections for easier handling.
