Hamantaschen, Aunt Sonia's (P, TNT)

Yield: About 80

1 cup vegetable shortening
1 cup brown sugar, packed
1/2 cup white sugar
1 teaspoon vanilla
3 eggs
5 cups flour
1 teaspoon salt (I use just a pinch)
1/4 teaspoon baking soda
2 teaspoons baking powder
1/2 cup orange juice
1/2 cup flour

Blend shortening, sugars, eggs and vanilla until light and fluffy in mixer. Sift together all dry ingredients. Add dry ingredients alternately with orange juice. Add another 1/2 cup flour (usually will be needed). If the dough still seems too soft to roll, refrigerate; don't add more flour unless you absolutely have to.

Roll out dough to 1/8" thick, and cut into circles. Put 1 teaspoon filling in center and pinch into hamantaschen shape. Bake at 375°F for 12 to 15 minutes or until golden brown.

Poster's Notes:
This may be too late for some of you, but I've been making my Aunt Sonia's recipe since I was in youth group in high school. It's the best I've encountered, and every year I hand it out to several people once they taste it. For filling, I usually use the canned Solo fillings. Got to save some time somewhere. This Sunday the synagogue youth group and I are making several hundred of these for them to sell as a fundraiser.
