Gingerbread Cookies (P, TNT)

Yield: 36 cookies

1/2 cup softened butter or margarine
1/2 cup light brown sugar
1 egg
3/4 cup molasses
3 cups flour
1/4 teaspoon salt
1 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon baking soda

Beat butter and brown sugar together until fluffy. Add egg and molasses and mix well. In another bowl sift flour, salt, spices and baking soda together. Stir into butter mixture. Mix until all ingredients are thoroughly combined.

Roll dough into balls and place on greased cookie sheet. Dip bottom of a glass into bowl of sugar and flatten dough balls. Bake at 350°F for 8-10 minutes.

Poster's Note: A friend of my daughter's made these for her bridal rehearsal party and they were outstanding.
