Drop Cookies (P, TNT)

Yield: 3 dozen

2 eggs
2/3 cup oil
2 tsp. vanilla extract
1 tsp. lemon rind. grated
3/4 cup sugar
2 cups flour
2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 400°F.

Beat eggs with a fork. Stir in oil, vanilla, and lemon rind. Blend in sugar.

Sift together flour, baking powder, and salt. Add to egg mixture.

Drop by teaspoonfuls about 2" apart on ungreased cookie sheet. Stamp each cookie flat with bottom of a glass dipped in sugar. Lightly oil bottom of glass, then dip in sugar.

Bake for 8 to 10 minutes. Remove from cookie sheet and cool.

Poster's Notes:
VARIATION: Decorate cookies with nuts (omit) or chocolate bits prior to baking. I bet even colored sprinkles would work and be an special treat.
