Crackers, Graham II (D/P, TNT)
Source: Greg Gillespie's "1001 Cookie Recipes"
Yield: About 4 dozen

3 cups graham flour (you can get this from King Arthur) OR whole wheat flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup canola or safflower oil
1/4 cup honey
1/2 cup light brown sugar (packed)
1 large egg
1/4 cup evaporated milk (I used soy milk to keep it pareve)
1 tsp. lemon juice
1 tsp vanilla extract

Preheat oven to 375°F. Lightly grease 2 baking sheets.

Combine oil, sugar, honey. Add milk, egg and flavorings. Blend in dry ingredients.

Divide dough in half, roll out to thickness of 1/8" on each baking sheet. Lightly score the dough into 2" squares using a pastry cutter. Bake for 8 to 10 minutes until lightly browned (watch them because they can burn pretty quickly). Cool on the baking sheets on wire racks, then cut into squares along the scored lines.

Poster's Notes:
I've made them and they're good, not quite the same, but definitely a good, not-to-sweet cookie to nibble on.
