Chocolate Chip Cookies, Pesach II (D/P, KLP, TNT)

Serves: Many dozen! (I didn't count, but at least 7-8 doz.)

1/2 lb. butter or margarine
1 cup brown sugar
3/4 cup white sugar
2 eggs
1 tsp. vanilla
3/4 cup cake meal
3/4 cup potato starch
1 tsp. baking soda
1-1/2 cups chocolate chips

Preheat oven to 350°F. Grease cookie sheet well, or cover with foil and grease foil. (Next time I might try parchment paper, since these cookies do stick).

Cream butter and both sugars together until light and fluffy. Add eggs and vanilla and mix well.

Combine dry ingredients and stir in, mixing thoroughly. Add chocolate chips to batter.

Drop by rounded teaspoonfuls on prepared cookie sheet.

Bake on middle rack for 8-9 minutes.

Remove from oven. Cool for two minutes. Then transfer to rack and cool completely.

Poster's Notes:
These cookies taste as close to real chocolate chip cookies as you can get. They are very thin--like a Florentine, but have the real chocolate chip cookie taste.

The cookies spread and may run together. If so, just cut between them, when you remove from oven.
