Brownies, Chametz-Like Pesach (P, KLP, TNT)

Yield: 24 2" squares

6 eggs (4 whole, 3 whites okay)
2-1/2 cup sugar
3/4 cup oil
1 tsp. vanilla
3/4 cup cocoa
1 or 1-1/2 cup potato starch or use smaller quantity for moister brownies
1 cup nuts, optional

Preheat oven to 350°F.

Beat eggs and sugar. Add oil and vanilla. Mix cocoa and starch, add to mixture. Pour into 9"x13" pan. Bake at 350°F until dry.

In a 9"x13" pan, bake 30 minutes.  Texture is cakey.

In small jellyroll type pan, bake 18 to 20 minutes. Texture is more moist/fudgy.

Poster's Notes:
These are the best Pesachdik brownies I have ever tasted--forget the cake mixes and go with these.
