Bars, Coconut Raisin (P, TNT)

Serves: 9

1 stick margarine
1/2 cup confectioners' sugar
1 cup + 2 tbsp. flour, divided
2-2/3 cups (7 oz.) coconut, divided
2 eggs
1 teaspoon vanilla
1 cup brown sugar
1 teaspoon baking powder
2/3 cup raisins
1/2 cup chocolate chips

Beat margarine until fluffy. Add confectioners' sugar. Then add 1 cup flour and 2/3 cup coconut.

Press into ungreased 9" square pan. Bake at 350°F for 20 minutes, until brown.

Beat eggs and vanilla. Add brown sugar. Stir in 2 tbsp. flour and baking powder, then add raisins and 1 cup coconut. Pour onto crust. Bake an additional 30 minutes.

Remove pan from oven. Sprinkle with chocolate chips. Cover with foil 2 to 3 minutes until chips soften. Carefully spread to frost. Sprinkle with coconut. Cool and cut.

Poster's Notes:
This recipe can be doubled, frozen, you name it. For a prettier presentation, cut squares, then diagonally to make triangles. Cut cold for ease of cutting.
