Almond Cookies II (D, TNT)
Source: An old Jewish cookbook
Serves: 10 to 12

2 cups ground almonds
3/4 cup sugar
1/2 cup packaged toasts, finely ground
1/2 cup butter, melted
Confectioners' sugar

Preheat oven to 350°F.

Add the sugar to the ground almonds and bread crumbs. Add the melted butter.

Place on parchment or waxed paper and pat into a very thin layer (rolling pin is not necessary). Cut into small rounds with a glass or biscuit cutter.

Place on an ungreased cookie sheet and bake until lightly browned, about 10 to 12 minutes. Remove from the baking sheet with a knife tip as soon as they hold together (after about 3 to 5 minutes) and dust with confectioners' sugar.

Poster's Notes:
Maybe you could use your own toasted finely ground bread crumbs but I like packaged toasts.

I make these frequently. The original recipe which is from an old Jewish cookbook which I don't have any longer, resulted in the batter being too loose so I add packaged toasts which I grind very finely in the processor. The toasts are found in the supermarket section where they sell packages of gourmet crackers and Zwieback and things like that. The cookies are delicious and thin and not difficult to prepare.
