Yogurt Cheese (D, KLP, TNT)

Serves: about 1 cup. Keeps about 1 week in the refrigerator.

2 cups of non-fat yogurt

Line a strainer with either cheesecloth, paper toweling or a paper coffee filter. Place strainer over a bowl. Spoon 2 cups of non-fat yogurt into strainer. Cover, refrigerate and let drain.

In 3 to 4 hours, you will have creamy-textured Yogurt Cheese, an excellent substitute for mayonnaise, sour cream or whipped cream.

After 12 to 24 hours, you will have firm-textured Yogurt Cheese, a smooth and creamy alternative to cream cheese or cottage cheese.

A truly guilt-free dip or spread! Use yogurt without added gelatin, starch or stabilizers.
