Kabak Tatilisi (Pumpkin in Syrup) (P, KLP)

Serves: 12

3 pounds pumpkin (or other hard squash)
1-3/4 cups sugar
2 cups water
1 cup crushed walnuts

Seed and peel the pumpkin and cut into 2"-3" thick slices.

Arrange the slices in a flat pan. Spread the sugar over the slices. Pour the water over the slices. Cover and cook on low heat for 50-60 minutes until the pumpkin is tender.

Let cool. Arrange the slices in a serving dish. Pour the syrup over the slices. Sprinkle with crushed walnuts.
