Peanut-Carob Balls II (P, TNT)
Source: The working title of my cookbook is: "The 'I Love Shabbos' Cookbook - Heavenly Sabbath Meals for Down-to-Earth Cooks."
Yield: 30 balls

1/2 cup rolled oats
1/2 cup carob powder
1/2 cup honey
1 cup chunky peanut butter
2 tbsp. water
1/2 cup (or more) chopped almonds or other nuts

Mix together rolled oats and carob powder.

Add honey, peanut butter and water to dry ingredients and mix well. If too dry add a few drops of water.

Wet palms (to prevent sticking) and roll into 1" balls.

Put almonds in a small, deep bowl. Roll each ball in the nuts until well coated, then chill. Serve in crimped paper liners.

Poster's Notes:
Variation: Try experimenting with different coatings, e.g. shredded coconut, wheat germ, sesame seeds, etc.

These treats are full of nutrition, easy to make (no cook) and can be a fun project for the kids to do themselves.

Carob, with a fruity, chocolaty taste, is not only good for you, it's really good! These delicious carob balls take only a few minutes to prepare and require no cooking. They may be made in advance and frozen. But they'll probably disappear before they ever reach the freezer. One of my students reported that she prepared the mixture in the morning and left it in a bowl in the refrigerator, planning to roll the balls later...but this never happened. Throughout the day both she and her husband kept pinching off bits to nibble on; until somehow, mysteriously, it all disappeared...
