Sponge Cake, Orange-Nut I (P, KLP, TNT)

Serves: 12 to 16

8 eggs, separated
2 cups plus 3 tablespoons matzo meal, divided
2 cups sugar
1 cup vegetable oil
1/2 cup walnuts or pecans, chopped
1 cup orange juice or juice of 2 oranges
Zest of 1 orange plus 1 tablespoon orange zest, divided
2 tablespoons walnuts, ground
1/2 cup orange marmalade

Preheat oven to 350°F.

Using hand mixer, beat egg whites until stiff with formed peaks, taking care not to overbeat.

In separate bowl, combine 2 cups matzo meal, the sugar, oil, walnuts, egg yolks, orange juice and zest of 1 orange. Mix until well blended. Using spatula, carefully fold in egg whites, taking care not to over mix whites.

Grease 10" or 11" springform pan and pour batter into pan.

In small bowl, combine remaining 3 tablespoons matzo meal and the ground nuts. Using your hand, sprinkle batter with mixture. Bake 1 hour, or until cake comes out golden and cake tester comes out clean. Cool completely.

While cake is baking, boil marmalade over low heat 5 minutes. Mix in remaining 1 tablespoon zest. Set aside. When cake is cool, spread mixture on top of cake.
