Pumpkin Patch Cake (P, TNT)

Serves: 12

1 cup honey
1 cup vegetable oil
1 16-oz. can of pumpkin
1 cup banana, mashed, ripe
4 eggs
1 tsp. vanilla
3 cups whole wheat flour (or half white and half whole wheat flour)
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1 cup walnuts, coarsely chopped
1 cup seedless raisins

In large mixing bowl, blend together honey, oil, pumpkin, banana, eggs, and vanilla.

In medium bowl, stir together flour, baking powder, baking soda, salt, and spices. Stir into pumpkin mixture. Fold in walnuts and raisins.

Pour batter into a greased 10" tube or Bundt pan. Bake at 350°F 50 to 60 minutes or until cake tests done. Cool and then serve.
