Ginger Cake, Pesach (P, KLP)
Source: My mother
Yield: 1 large cake

6 eggs
1-1/2 cups sugar
1 cup water
1 cup syrup
1-1/2 cups oil
1-1/2 cups potato flour
1-1/2 cups cake meal (fine matzo meal)
1 tsp. cinnamon
2 tsp. ginger
2 tsp. KLP baking soda (bicarbonate of soda)

Mix all ingredients together for 5 minutes. Pour into a large tin (use large foil roasting tin). Allow to stand for 30 minutes.

Bake in 160°C oven (about 300°F) for 1 hour. Test if ready.

Poster's Notes:
I've just returned from South Africa with a pile of recipes from my mom. She gave me this one which she assured me was super. She said that it makes a very big cake--just right for the large Seder I'm having!
