Ginger Cake (P, TNT)

Serves: 10-12

3 cups flour
1 cup sugar
1 cup oil
1 cup corn syrup
3 eggs
2 tsp. mixed spice (see note)
2 tsp. cinnamon
4 tsp. ginger
2 tsp. baking soda mixed with 1/4 cup warm water
3/4 cup water

Mix all ingredients. Food processor is terrific for this cake.

Optional: add some fruit or to make this cake spectacular, melt together 2 oz. butter or margarine with 3/4 cup brown sugar. Add pecans to this mixture.

On the bottom of the tube tin, throw in the nut mixture. Top this with apples (tinned or fresh). Then pour the ginger cake mixture on top of this and bake.

When you invert the cake the apples and nuts look interesting and taste delicious too.

Bake at 350°F for 50 minutes, I suggest you use a tube tin.

Poster's Notes:
As far as the mixed spice is concerned, we buy a product called mixed spice. I've taken a look on the container and this is what it contains:
Cinnamon, coriander, nutmeg, pimento, ginger, cassia and cloves. I really have no clue how you could play around with that one. Maybe someone else has some ideas.
