Chocolate Ganache, Soy (P)

Yield: 2 cups, enough for a 2 layer 8" cake

1-3/4 cups (10 oz.) semisweet soy chocolate chips (regular chips can be substituted)
3/4 cups whole soy milk

Put the chocolate chips in a medium bowl (glass is best) and set aside.

In a small saucepan, heat the soy milk over a medium flame, just until it starts to boil. Remove from the heat and pour directly over the chocolate chips; with a wire whip, mix quickly until smooth.

Immediately pour evenly over the cake until it is covered. Let cool and serve.
