Cupcakes, Low-Fat Chocolate (P, TNT)

Yield: 10 to 12

1-1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
1/4 cup cocoa
1/2 cup orange juice
1/3 cup water
3 tbsp. oil
1 tbsp. vinegar
1 tsp. vanilla extract
1/3 cup chocolate chips

Combine dry ingredients and set aside. Combine all liquid ingredients.

Make a well in the center of the flour mixture and add liquid ingredients. Fold in chocolate chips. Spoon batter into paper-lined cupcake pan and bake at 375°F for 15 to 20 minutes.

Poster's Notes:
I do not make cupcakes very often. Nearly every week I make muffins for the children to have as an after-school-snack. But, last month I made these cupcakes one week as a treat. Not sure, but I might have replaced some of the water with more orange juice. Everyone liked them very much.
