Crazy Cake, Chocolate I (P, TNT)
Source: Recipe book by Nurses at the Albert Einstein Med. Ctr., Northern
Yield: 1 13"x8"x2" baking pan

3 cups flour
2 cups sugar
2/3 cup cocoa
2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
2 tbsp. vinegar
1 cup melted margarine
2 cups cold water

Preheat oven to 350°F.

Sift first five ingredients into large bowl. Make two small and one large well in dry ingredients.

Put vanilla in one hole, vinegar in second hole and margarine in large hole. Pour cold water over entire mixture. Mix well.

Pour into well-greased  baking pan. Bake for 45 minutes. Cool in pan.

Poster's Notes:
The cake is so moist that it is difficult to remove from pan. I line pan with tin foil, lift out when cool and turn upside down on a tray and immediately flip over to my serving plate. It can be dusted with confectioners' sugar or iced. It is always a big hit.

I never tried cupcakes, but I have been told that it makes great ones. I would use the paper cupcake cups, though, as this is so moist it is sometimes hard to get out of the pan.
