Coffeecake, German Apple (D)

Serves: 12 to 16

3 eggs
2 cups sugar
1 cup vegetable oil
1 tsp. vanilla extract
2 cups all purpose flour
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 cups chopped, peeled tart apples
3/4 cup chopped pecans

Frosting:
1 8-oz. package cream cheese, softened
2 tsp. butter or margarine, softened
2 cups confectioners' sugar

Beat the eggs, sugar, oil, and vanilla.

Combine the flour, cinnamon, baking soda, and salt. Add to egg mixture and mix well. Fold in the apples and nuts.

Pour into a greased 13"x9"x2" baking dish.

Bake at 350°F for 55 to 60 minutes or until a toothpick inserted near the center comes our clean. Cool on a wire rack.

For the Frosting: Beat together the cream cheese and butter. Add the confectioners' sugar, beating until smooth. Spread over cake.

Refrigerate leftovers.
