Bread, Zucchini-Chocolate I (P, TNT)

Yield: 2 loaves

2 cups flour
1 tbsp. cinnamon
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 eggs, beaten
2 cups sugar
1 cup vegetable oil
1 tbsp. vanilla
2 cups zucchini, loosely packed unpeeled, grated
1 cup chopped nuts, or 1/2 cup each raisins and nuts
1/2 cup chocolate chips (optional)

In a large bowl sift together the flour, cinnamon, baking soda, baking powder, and salt.

Combine the eggs, sugar, oil, and vanilla, and stir into the flour mixture until well-blended. Stir in the grated zucchini and nuts.

Pour into two greased 9"x5"x3" loaf pans and bake in preheated 350°F oven for 1 hour.
