Bread, Strawberry (P, TNT)
Source: "Claire's Corner Copia Cookbook"
Serves: 1 loaf

2 eggs
1 cup sugar
1/3 cup oil
1/3 cup unsweetened applesauce
1 1/2 cup unbleached flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. freshly grated lemon zest
1-1/2 cups sliced fresh strawberries
1/2 cup chopped walnuts

Preheat oven to 350°F.

Lightly whisk the eggs in a mixing bowl. Add sugar, oil, and applesauce, beating for 1 minute.

In a separate bowl, whisk together the flour, cinnamon, baking soda, salt, and lemon zest. Pour the liquid ingredients over this mixture all at once and stir well to combine.

Stir in the strawberries and walnuts.

Spray a 9"x5" loaf pan with nonstick cooking spray or grease and flour the pan. Pour the batter into prepared pan using a rubber spatula to scrape the bowl. Smooth the top. Bake in the center of the oven about 1 hour 30 minutes, until a cake tester inserted in the center comes out clean.

Let stand for 5 minutes before inverting onto a cake dish. Carefully turn so that the flat side is on the bottom.

Poster's Notes:
This can be made as muffins. Can be a bit sweet: if you like things less sweet, cut back on the sugar. I found in my oven that it only took one hour. Set your alarm for 45 min-1 hour to check the bread first. This is more like a desert than bread---really yummy on hot summer day with frozen yogurt or to slice for breakfast and toast for breakfast.
