Bread, Prune Plum Nut (D, TNT)

Yield: makes 2 loaves (16 slices per loaf)

2 cups chopped, pitted purple prune plums
1 cup butter or margarine
2 cups sugar
1 teaspoon vanilla
4 eggs
3 cups flour
1 teaspoon salt
1 teaspoon cream of tartar
1/2 teaspoon baking soda
3/4 cups unflavored yogurt (I have used lemon yogurt with success)
1 teaspoon grated lemon peel
1 cup chopped nuts

Prepare plums.

Cream butter or margarine with sugar and vanilla until fluffy. Add eggs, one-at-a-time, beating after each addition.

Sift together flour, salt, cream of tartar and baking soda.

Blend yogurt and lemon peel together and add creamed mixture alternately with dry ingredients. Stir until well blended. Add chopped plums and nuts and mix well.

Divide between two greased and floured 9"x5" loaf pans. Bake at 350°F for 50 to 55 minutes or until bread tests done.

Poster's Notes:
If the plums are not available I don't see why you can't use another fruit, perhaps blueberries that go very well with lemon.
