Bread, Date Nut I (P, TNT)

Serves: 8-10

1 package pitted dates, chopped
2 teaspoons baking soda
2 cups boiling water
2 tablespoons plain Nyafat or margarine or shortening or oil; tastes best with the Nyafat
1-1/2 cups sugar
2 eggs
3 cups flour, sifted
1 teaspoon vanilla
1 cup walnuts, chopped (1/2 lb)

Preheat oven to 350°F.

Cut dates into small pieces if you haven't bought chopped dates. Sprinkle with baking soda. Add boiling water and allow to saturate.

Cream sugar with Nyafat, add well beaten eggs and mix thoroughly. Add vanilla. Strain liquid from dates and reserve. Pour dates into egg mixture, add flour, alternating with date liquid, mix thoroughly after each addition. Mix in nuts.

Bake in a loaf pan or several mini-loaf pans for 1 hour or until a cake tester comes out clean.

[Carol Kaplan]: "I have tried many substitutes for the Nyafat. Nothing seemed to work as well. Nyafat can be purchased in the supermarket in the kosher food section. It is on the shelf in a carton and comes plain and with onions. Please purchase the plain Nyafat ."
