Chocolate Zucchini Cake II (D/P, TNT)

Yield: 1 28cmx18cm(11"x7") cake

185g (6 oz.) margarine, room temperature
2 tsp. vanilla essence
2 cups grated zucchini, drained well
1-1/2 cups sugar
3 eggs
1/2 cup milk or soy milk
2-1/2 cups plain flour
2-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1/2 cup cocoa
1 tsp. cinnamon

In mixing bowl, beat margarine, vanilla, zucchini, sugar, eggs and milk together for 3 minutes. Add remaining ingredients, sifted together, and beat until well combined.

Bake in a greased tin in a moderate oven 180°C (350°F) for about 60 minutes, or until cooked through.

Turn on to a wire rack to cool. Suitable to freeze.
