Chocolate Cake, Flourless IV (P, KLP, TNT)

Serves: 10-12

150g bittersweet chocolate, about 5 oz.
1/2 cup sugar
2 tbsp. wine, any kind
150g margarine, about 5 oz.
6 yolks
1-1/4 cups potato starch
1 heaping tsp. baking powder
6 egg whites
1/2 cup sugar

Mix chocolate sugar and wine and melt together in bain marie (I use microwave instead).

Add margarine, and mix well. When melted, remove from heat and cool. Put in a large bowl. Beat yolks, and stir into cooled chocolate mixture.

Add to chocolate mixture potato starch and baking powder and stir until smooth.

Whip egg whites; when foam begins to form add sugar in 2-3 additions, and whip until peaks are formed. Fold egg whites into chocolate mixture.

Pour into greased 26cm/10" springform pan. Bake at 350°F for 55-65 minutes, or until a toothpick returns dry. Cool in pan for 15 minutes and then remove to rack and cool.

Poster's Notes:
Provided you are willing to use baking powder (and I don't see why not), this cake is a real hit. It never fails, it's very easy to make, and it comes out so high, that frequently I make it not on Passover.
