Chocolate Cake, Vegan (P)

Serves: 12

1-1/2 cups unbleached flour
1 cup evaporated cane juice or 1 cup sugar
3 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon vanilla extract
Pinch of salt
5 tablespoons canola oil
1 tablespoon apple-cider vinegar
1 cup cold water

Mix dry ingredients.

Heat canola oil in microwave for 20 seconds or so until just a little warm. Add to dry mix and then add vanilla and water. Mix thoroughly, but don't overmix. That will create too much gluten in the flour. Add the vinegar last and mix.

Pour into a 9" baking pan, round or square, greased or lined with parchment paper.

Bake at 350°F for 25 to 30 minutes.

Poster's Notes:
Someone was recently looking for a pareve chocolate cake. This one showed up in the paper today, so I haven't tried it (yet).
