Chocolate Cake, One Bowl (P, TNT)

Serves: 8-10

Cake:
2 cups flour
2 cups sugar
1 (3.3 oz.) package pareve instant chocolate pudding mix
2/3 cup unsweetened cocoa powder
1-1/4 tsp. baking powder
1 tsp. baking soda
1 cup liquid non-dairy creamer
1/2 cup canola oil
1/2 cup mayonnaise
3 eggs
2 tsp. vanilla

Glaze:
1 cup chocolate chips
1/2 cup non-dairy frozen ready-to-whip liquid topping, thawed

Make Cake:
Preheat oven to 325°F.

Lightly grease a 10" Bundt pan with non-stick baking spray.

In bowl of electric mixer whisk flour, sugar, pudding mix, cocoa, baking powder, and baking soda. Add non-dairy creamer, canola oil, mayonnaise, eggs, and vanilla.

Beat at medium speed for 2 minutes.

Pour into prepared Bundt pan. Bake for 45 to 50 minutes, or until skewer inserted in center comes out clean. Let cool in pan about 20 minutes.

Loosen sides and center with knife and invert onto serving plate.

Make Glaze and Assembly:
Place chocolate chips and non-dairy liquid topping in small saucepan.

Heat until melted and drizzle over cake.
