Chocolate Cake for a Crowd (D/P, TNT)

Serves: 20-25

Cake:
200 grams soft margarine or butter (1 cup)
1-1/2 cups sugar
3 eggs
2-1/2 cups flour
1/2 cup cocoa powder
1 bag baking powder
2 containers sour milk, or sour cream each about 6 fl. oz. (see note 2)
1 tablespoon vanilla essence

Frosting:
100 grams bittersweet chocolate (3 ounce)
100 grams (1/2 cup) butter or margarine
3 tablespoons each sugar, cocoa powder and liquid (see note 3)

Make Cake:
Beat (see note 1) butter and sugar until white and airy. Add one egg at a time while beating.

Alternately add dry ingredients or sour milk while beating. Add vanilla.

Pour into greased square pan and bake at 350ºF for about 30 minutes.

Make Frosting:
Put everything in a small pan and cook over very low heat until everything is blended.

Cool a little and spread on cake.

Poster's Notes:
1. Tony gave me this cake many years ago, and since then it saved me many times especially when I needed to bring a kid-friendly cake or didn't want to take out the "big" mixer since the cake can be also be made in the food processor.

2. Instead of sour cream or butter milk you can use 1-1/2 cups orange juice.

3. This versatile chocolate cream can be made with any liquid - milk, wine, Sabra liqueur, orange juice...
