Sandwich, Moon Egg (D/P, TNT)

1 egg
Salt (optional)
3 slices bread
Butter or margarine

Heat butter or margarine in a frying pan. Take a slice of bread and make a hole in the middle, about the size of the egg yolk and place in frying pan. Crack one egg and pour into hole. You can salt lightly if you so desire.

Brown on both sides of the bread with the egg in the middle. Egg may be well done or however you want, as long as it is sealed by the frying.

Place in between two slices of bread. You can toast the bread or eat it however you want.

Variation:
For a Cheesy Moon Egg, this can also be done with a slice of cheese on both sides of the egg. You add the bread on top and bottom. I always put a plate, face down, on top of the sandwich and then a partially filled teapot or iron to weigh it down, so it will all melt together. When brown, you turn it on the other side and do the same.

Poster's Notes:
I have used white or rye bread.

This is a recipe I thought I invented. I even gave it that name! After my kids were raised, I found it in a cookbook with another name. My kids would love to eat this. We actually called it a "Moon Egg." It is yummy in your tummy and fun to eat.
