Pancake, Puffy Apple (D, TNT)

Serves: 2

3 eggs, separated
3 tbsp. sugar
1/2 cup whole milk
1/4 cup flour
1/2 tsp. salt
1/4 tsp. Baking powder
1 cup diced apple (your favorite variety)
2 tbsp. sweet butter
1 tsp. cinnamon
2 tbsp. sugar

Beat egg whites until foamy. Gradually add 3 tablespoons sugar and beat until stiff.

Beat egg yolks, milk, flour, salt and baking powder. Stir in apple and fold in egg whites.

Melt butter in oven-proof frying pan. Spoon mixture into hot pan. Sprinkle on cinnamon and sugar (1 teaspoon cinnamon and 2 tablespoons sugar).

Bake at 450°F for 5 minutes. Reduce heat to 375°F and bake for another 10 minutes.

Poster's Notes:
This makes a lovely brunch dish or dessert. The recipe can be multiplied. It makes the house smell intoxicating, like apple pie.
