Omelet, Diabetic Fruit (P, KLP, TNT)
Source: Self
Serves: 1, easily doubled

2 egg equivalent, egg substitute or egg whites
1/2 cup berries (approximately)
2 packets KLP artificial sweetener
Cinnamon for sprinkling

Mix the berries and sweetener in a small bowl and put aside.

Pour the egg stuff into a hot, sprayed non-stick pan. Add the sweetened berries. Cook until done to your taste, don't overcook.

Roll and put on a plate and sprinkle with the cinnamon.

Easy and delicious.

Poster's Notes:
In my constant search for new sweet treats without sugar, I tried something this morning for breakfast that worked out just beautifully. It comes out rather like a very delicate crepe. If you are neither sugarly or chloresterally challenged you could use regular sugar and regular eggs.

This would make a lovely fancy dessert. I am sure there must be something like it out there, but I just wasn't aware of it. I imagine it would be nice topped with yogurt or whipped cream, etc.
