Casserole, Glazer's Egg (D, TNT)

Serves: 6-8

12 eggs
6 tablespoons milk or milk substitute
6 slices white bread or challah
1 cup Cheddar or similar cheese, grated (Monterey Jack is good)
1/2 cup green pepper, chopped
1/2 cup mushrooms, sliced
1/2 cup onions, chopped (can substitute shallots or green onions)

Beat eggs and add milk. Blend well.

Butter both sides of bread and remove crusts. Cube.

Grease casserole*.
First layer: 1/2 bread cubes
Second layer: 1/2 egg mixture
Third layer: 1/2 vegetables
Fourth layer: 1/2 cheese
Repeat with remaining ingredients.

Refrigerate 24 hours or freeze. Bake uncovered for 1 hour in a 350°F oven.

It can be cooked frozen but add another 20 minutes to the time. You can defrost it overnight in the refrigerator, if you wish.

*You can use a souffle dish, 9"x12" Pyrex dish or 12"x18" Pyrex dish. If you use a 12"x18" Pyrex dish, you will only have 4 layers instead of 8. It will also cook a lot quicker! This can be increased proportionally. Use 1-1/2 to 2 eggs per person. Use 2 tablespoons milk for every 2 eggs. Add an eighth cup cheese, 1/2 cup veggies and slice of bread for every additional 2 eggs. The actual amounts don't matter that much.
