Blintzes, Cupcake I (D, KLP, TNT)

Yield: 12 to 16

1 lb. creamed cottage cheese
2 oz. melted butter
3/4 cup sugar
Scant 1/2 cup cake meal
4 beaten eggs (can use egg substitute)

Mix all ingredients together except eggs; then add eggs. Grease muffin tins.

Fill tins 3/4 full; bake 350°F for 40 to 45 minutes if using large muffin tins. Smaller muffin tins will require less time. Serve with sour cream or jelly.

Poster's Notes:
I have made these cupcake/muffins and they are wonderful with fresh fruit. The sugar can be cut (for less sweet) and since there is less than 1/2 cup cake meal for 12 to 16 cupcakes, the carbs aren't horrific. My mom found the recipe on the web.
