Whole Wheat Bread, Sprouted (P, TNT)

Yield: 1 1-1/2lb. loaf

1/2 cup wheat berries
1 cup water
1 tbsp. oil
1/3 cup honey
1 tsp. salt
3 cups whole wheat flour
1/4 cup soy flour
1 package yeast or 1 tbsp. instant dry active yeast

Combine wheat and water together in a covered container and soak 12 hours or overnight.

Next day, pour the water and the germinated wheat into a blender beaker. There will be about 2/3 cup germinated wheat and 3/4 cup water. Chop in the blender into a slurry, about 2 minutes at high speed. The wheat will be broken into bits, contributing both nutty flavor and chewy texture to the finished loaf.

Add the oil, honey and salt and blend for a few seconds to combine. Pour into bread machine bowl.

Add the flour and yeast and bake according to manufacturers directions. If your machine has a separate yeast compartment, place the yeast there.

Note: The soy flour is added to boost the protein. If you prefer, you may replace it with an equal amount of whole wheat flour.
