Sourdough, Best Bread Machine (P, TNT)

Yield: 1 1.5 pound loaf

1/2 cup warm water
1 cup sourdough starter
2-1/4 cups bread flour
1 tablespoon sugar
1 tablespoon oil
1 teaspoon salt
3/4 tablespoon yeast

Place ingredients in order in bread machine. Makes large loaf in Hitachi.

Mort Goldberg writes: "Posted in response to a request for a good pareve bread machine sourdough recipe. However, sourdough purists will tell you that this recipe isn't real sourdough, since it uses commercial yeast in addition to starter. As a rule, you'll get much better results with sourdough by not using a bread machine except, perhaps, for mixing and kneading. Timed, pre-programmed cycles don't work well with real sourdough, which tends to take longer to rise than bread leavened with commercial yeast."
