Scones II (D/P, TNT)

Yield: 12 scones

2 cups flour
Pinch salt
1/2 cup oil
4 rounded teaspoons baking powder
1 egg
1/2 cup milk

Beat egg. Add oil and milk. Mix well. Add to flour, salt, and baking powder.

Knead lightly and cut in 1/2 thick rounds. Glaze top with the bit of egg mixture remaining in the jug. Place in baking tray on nonstick paper or lightly floured.

Bake 200°C (400°F) for about 10 minutes.

Hint: Position your scones on the baking tray close together. This traps the hot air in the oven and encourages them to rise.

Poster's Notes:
I've been making these scones for more years than I care to remember. They take a few minutes to make and can literally be whipped up as unexpected guests knock on the door. It is easy to make them pareve too. Just substitute the milk for orange juice.
