Pumpernickel, Bread Machine (P, TNT)

Yield: 2 loaves

1-2/3 cups water
2 tbsp. oil
2 tbsp. sugar
3 tbsp. molasses
2 tsp. salt
2 tsp. instant coffee granules
3 tbsp. cocoa
3-1/3 cups white flour
1 cup whole-wheat flour
3/4 cup rye flour
1/2 cup wheat bran
2 tsp. dry yeast

Put everything in your machine in given order (or as your machine orders it).

I just make the dough in the machine, then remove it and shape into 2 small or 1 big round loaf. Slash the top about 3 times on the diagonal with a lame or sharp knife. Cover and let rise for about 45 minutes.

Bake in 350°F to 375°F degree oven for around 30 minutes–-adjust as necessary depending if you are making bigger or smaller breads.

Poster's Notes:
For authenticity, you can dust the pan with cornmeal. Cool loaves on wire rack; this promotes cooling and prevents soggy bottom.
