Pita, Bread Machine (D, TNT)

Yield: 22

3-3/4 cups bread flour
2/3 cup milk
1-1/2 tbsp. honey
1 tsp. salt
1 tsp. baking powder
2 tbsp. oil
2/3 cup plain yogurt
1 large egg
2 tsp. yeast

Program bread machine on dough mode. Remove and shape into golf ball size balls. Cover and let rise for 30 minutes.

Heat empty cookie sheet in 500°F oven. Roll and flatten balls into thin circles, spray cookie sheet with non-stick cooking spray, throw circles onto hot sheet, and bake for 2 minutes.

Turn them over and bake for 1 additional minute. Pitas will puff up and will be easy to split if you don't cover them or put them in a bag.
