Pita Bread (P, TNT)

Serves: 6-8

1-1/2 cups plus 2 tbsp. warm water
2 tbsp. olive oil
4 cups flour
4 tsp. sugar
1-1/2 tsp. salt
3 tsp. bread machine yeast

Place all ingredients in pan of a bread machine. (Ingredients should all be room temperature.) Set the bread machine on the dough setting. When dough is ready, cover with a towel and rest for 15 minutes.

Preheat oven to 450°F.

Make sure that the oven rack is in the lowest position. Divide the dough into eight (or six larger) pieces. Roll each piece into a ball. Using a rolling pin, flatten each ball into a 8" circle. Use a wide spatula to slide the pitas on a pizza stone, bread tile, or a heavy-duty cookie sheet. Bake for five minutes. The tops of the pitas will not brown. To brown the tops, if desired, broil for about 30 seconds. Watch carefully so that the pitas do not burn.
