Muffins, Carrot Kugel (P, TNT)

Serves: About 6

4 large carrots or 8 ounces of baby food carrots
1 cup flour
1/2 cup dark brown sugar, firmly packed
1/2 cup sugar
1-1/2 teaspoons baking powder
1/2 cup oil or applesauce
2 large eggs
1 tsp. vanilla extract

Mash carrots or use baby food. Preheat oven to 350°F. Coat a 9" spring form pan with non-stick cooking spray or muffin tins. Set aside.

To the carrots add flour, sugars, baking powder, oil, eggs, and vanilla. Beat at medium speed with an electric mixer until well blended. Do not over beat so batter will have small pieces of carrot for texture.

Pour mixture into prepared pan. Bake for 45 minutes or until a toothpick comes out clean.
