Challah, Eggless I (P, TNT)

Yield: About 10 smaller challahs

5 cups warm water
3 packages yeast
5 pounds flour
3 eggs (optional)
1 cup oil
3 tbsp. salt
2 cups sugar

Glaze:
2 eggs
1-1/2 tsp. vanilla
1-1/2 tsp. sugar
Drop of water

Mix yeast and warm water. Let rise for 20 minutes.

Mix in all ingredients (except for glaze ingredients) and knead. Let rise for 3 hours.

Shape. Let rise 1 hour.

Mix all glaze ingredients, and spread on top of challah. Bake at 350°F for about 20 minutes, until golden on top.
