Challah I (P, TNT)
Source: "The Garden of Eating"
Yield: 2 large loaves

1 stick margarine
1 cup boiling water
2 oz. fresh yeast, a cube
1 tbsp. sugar
3/4 cup sugar
1-1/3 cups lukewarm water
3 eggs
1 tbsp. salt
9 cups flour
1 egg yolk
2 tsp. sugar

In a large bowl dissolve margarine in the boiling water.

In a smaller bowl put yeast, 1 tbsp. sugar, and lukewarm water.

To the margarine mixture, add eggs, salt, 3/4 cup sugar, and 3 cups of flour. Mix well.

Add yeast mixture and mix. Add 3 more cups of flour and mix well. Then add the remaining 3 cups of flour and knead. Put in a greased bowl and cover. Let rise 2 hours at room temperature or overnight in the refrigerator. Shape loaves and let rise another 1/2 hour.

Brush loaves with egg yolk and top with 2 tsp. sugar. Bake at 400°F for 10 minutes and then at 350°F for 30 minutes.
