Liqueur, Limoncello III (P, TNT)

Yield: 2 quarts

8 lemons
1 quart pure alcohol
1 quart of water
1-3/4 pounds sugar

Remove a thin layer of lemon peel from the 8 lemons (leave the white part on the lemon); cover the peels with the alcohol for eight days.

On the eighth day, put the water (minus a cup of it) to boil, add the sugar, and boil for a few minutes before adding the remaining cup of water.

Let the water/sugar mixture cool. While it is cooling, filter the lemon/alcohol mixture with a cheesecloth or coffee filter.

Mix the two mixtures together, bottle, and cool in the freezer before drinking.

You may store the limoncello in the freezer as you enjoy it slowly!

Poster's Notes:
I used peel of 8 lemons, 750ml (1 bottle) of 95% alcohol, 750ml mineral water, and 600g sugar. Leaving in some of the white gives a pleasant bitterness to the final product.

Use an equivalent amount of orange peel to make Aranciello.

What should you do with the eight unpeeled lemons? Use the pulp of the lemons to make veal or chicken with lemon sauce or some good, refreshing lemonade!
