Chili Con Carne for a Crowd (M, TNT)
Source: A woman who won a chili contest with it in a wine and chili fair in Ithica New York, circa 1994
Serves: 20-25

3 to 4 pounds good ground beef
1 medium onion, minced
6 to 8 garlic cloves, smashed
1 12-to-15 ounce can tomato sauce
2 14-1/2 ounce cans chicken broth
6 tbsp. commercial chili powder
3 tbsp. cumin powder
Salt, to taste
Sugar, to taste
1/2 tsp. cayenne
1 tsp. of oregano
2 15-1/2 ounce cans of kidney beans
Fat or canola oil, for frying

Brown the beef in just a little bit of fat, or canola oil, your choice here.

Transfer to the chili pot. Sauté the minced onion, together with the garlic.

In a separate mixing bowl: combine tomato sauce, chicken broth, chili powder, cumin powder, salt, cayenne, and oregano. Combine with other ingredients.

Cover and cook in a light simmer for 45 minutes, then add kidney beans, and cook for the last 15 minutes. Add the sugar to taste, at the end.
