Shepherd's Pie, IV (M, TNT)

Serves: 4 to 6

Filling:
1-1/2 lb. minced meat (medium or lean ground beef is good)
1 egg
1/2 tsp. seasoned salt
Dash pepper
1 cup tomato sauce
2 to 3 tbsp. corn flake crumbs

Topping:
1 large onion, diced
2 tbsp. oil
4 to 5 potatoes, boiled and mashed
Salt and pepper to taste

Make Filling:
Preheat oven to 350°F.

Combine ingredients in order given. Mix well.

Place in a casserole and bake at 350°F for 1/2 hour. Mash meat 2 or 3 times during cooking, so that it is crumbly rather than solid.

Make Topping and Assembly:
Brown onion in hot oil. Combine with mashed potatoes. Season.

Cover meat with potatoes. Sprinkle with paprika, if you want to--it looks nice that way.

Return to oven for 1/2 hour to brown.

Poster's Notes:
Recipe may be made in the morning, and browning done just before serving. You can also use tofu ground round for your vegetarian pals or family.
